London's First
Sugar Free &
Gluten Free Bakery

Just like our ovens, we are red hot passionate about healthy baking! Our ethos is to facilitate a healthy lifestyle by removing sugary and heavily processed foods from people's diet. In this way we believe we are contributing to a healthier future for all.

We began our own Free-From journey as a humble regular bakery. With a keen eye on health trends, a commitment to changing dietary habits and meeting our customers' developing needs, we were inspired to bake in a new and health-conscious way. We locked ourselves away in the kitchen only to re-emerge with Organic, Sugar Free, Gluten Free, Dairy Free, Soya Free, Low GI, Vegan, and Vegetarian products... with the portfolio and innovation continuing to grow.

And whether it’s a health condition, an allergy or a lifestyle choice that has brought you to a Free-From diet, we also believe that taste is not something you should have to compromise on. Through innovation and recipe reformulation we have managed to produce a vast array of sweet and savoury goods, no matter your dietary wishes and requirements. And enjoy them you shall!

We're always delighted to know that our creations bring joy to our customers and are a saviour for diabetics, coeliacs, or anyone choosing a Free-From diet. So drop into our Our Cafe and Bakery on 178 Upper St (opposite Islington Town Hall) or Order Online and join the Free-From revolution.

Organic, Nutritious
and Locally Sourced

When it comes to the ingredients that go into we use in our products, we put a lot of thought into their nutritional properties, their function and where they come from. Many free-from products on the market tend to be choc full of refined high carb ingredients, chemicals, additives, refined sugars, and starchy items like potato. We want to change that!

Here, we take pride in our ingredients, which is why Romeo and his baking team have worked tirelessly, experimenting with different ingredient combinations to produce innovative, healthy, Free-From products that are delicious as they are nutritious.

All of our ingredients are Organic as well as being locally and ethically sourced, to every extent possible. For example our Organic Milk comes from Ivy House Farm , our Organic Gluten Free flours from Shipton Mill, and our Organic Vegetables from Wild Country Organics.

For more information on some of the Key Ingredients that go into our baking, please see below.

Key Ingredients

Things we use more than others

Almond

Almond

Used as almond flour, almond cream and almond butter.
Packed full of protein, antioxidants, B vitamins and minerals (including Calcium, Phosphorous, Potassium and Zinc) almond flour, cream and butter contain the same nutrient profile as whole almonds. Almonds are a great source of monounsaturated fats which help to lower blood cholesterol and blood pressure.

We love using them to flavour foods and as a substitute for grain and dairy, making our baked goods suitable for those with grain allergies, coeliac’s or those with a gluten and/or lactose intolerance.

Taste this versatile ingredient in all its glory in our Apple and Almond Tart!

Buckwheat

Buckwheat

Used as buckwheat flour.
Despite its name, this plant is totally unrelated to wheat (in fact not a grain at all, but rather a fruit seed related to rhubarb) and is therefore naturally and completely Gluten Free. Famous for it’s protein and high fibre content, Buckwheat is also a source of minerals including Magnesium, Manganese and Copper. Perfect for anyone following a Gluten Free or plant-based diet due to it’s high digestible protein content.

We love the mild, earthy sweetness Buckwheat adds to our baking.

Cacao

Cacao

Used as cacao powder.
A high density of nutrients means that Cacao is a favourite among the health conscious. The nutty bitter chocolate flavour is not the only good thing about this ingredient. Cacao is also a rich source of antioxidants and a powerhouse of minerals including Calcium, Magnesium, Copper, Iron, Zinc and Potassium. It is also a great source of B vitamins and is packed full of healthy essential fatty acids which help improve cholesterol levels.

We use it wherever we desire that deep and satisfying chocolate flavour - not to mention all the added nutritional benefits Cacao provides.

Cashew

Cashew

Used as cashew nuts, cashew cream, and cashew butter.
Cashews are renowned for their healthy fatty acid profile. High in unsaturated fats (MUFA and PUFA) these nuts can help improve cholesterol levels. They are also a mineral-powerhouse comprised of Copper, Zinc and Magnesium. Like other nuts, Cashews are a great source of protein and contain dietary fibre.

As with Almonds, Cashews allow us to create delicious Gluten Free, Dairy Free goods suitable for those with an intolerance, coeliac disease - as well as for Vegans.

Try any of our Vegan Cheesecakes to experience just how creamy cashew can be!

Coconut

Coconut

Used as coconut flour, coconut milk, coconut blossom sugar and coconut cream.
We’ve been experimenting with the mighty coconut in all it’s forms and derivatives for a long time and with good reason! Packed with antioxidants, vitamins C, E, and B's, it also is a good source of minerals Iron, Calcium and Magnesium. The Coconut Flour we use is made from 100% dried coconut meat which is then ground to form the flour-like texture. High in protein and fibre it is also a source of healthy fats (medium chain fatty acids) and completely free from any grains, including wheat and gluten which makes it a perfect option for coeliac’s or those suffering with a gluten sensitivity. As it’s low in sugar and has a low GI it is also a great choice for diabetics.

Unlike their dairy counterparts, Coconut Milk and Coconut Cream are entirely lactose free which makes them a perfect dairy alternative for vegans as well as anyone with a lactose intolerance.

We also use Coconut Blossom Sugar which is produced from the flower blossoms of the coconut tree. This is a simple low-glycemic sweetener which adds sweetness without having the same impact on blood glucose as any of the regular refined sugars.

Most of our Sponge Cakes and Cheesecakes are choc full of coconut in its many forms - so get your fix here!

Lacuma

Lacuma

Used as lacuma powder.

The Lacuma fruit is native to South America and has a yellow-orange colour. It is this colour that indicates the presence of beta-carotene a powerful antioxidant and a great source of plant vitamin A for vegans and vegetarians. Also contained in this exotic fruit is Iron, Zinc, Calcium and protein as well as a mellow sweetness.

We use it in our baking to add natural sweetness while maintaining a low glycaemic count.

Linseed

Linseed (Flaxseed)

Used as seeds and in ground form.

With a subtle nutty flavour Linseeds (also known as flaxseed) are one of the richest plant sources of Omega 3 fatty acids. Omega 3's are an essential fatty acid for a healthy brain, heart, and immune system. They are also a powerhouse of minerals including Calcium, Phosphorus and Magnesium - all which contribute to the maintenance of healthy bones - as well as Iron which maintains healthy red blood cells and fights off fatigue. If that was not enough there is plenty vitamins B1 and B3, the nutrients that help you release energy from the food you eat. Linseeds are also an excellent source of dietary fibre and low in carbohydrates - making them the perfect replacement to almost any grain.

You'll find our Banana Bars are packed full of Linseeds - as well is our bread!

Stevia

Stevia

Used as a natural sweetener.
Stevia is an all natural sweetener. The Stevia plant is native to South America and is used in lots of products as a sugar replacement. With no sugar and no calories, the addition of Stevia to products as a sugar substitute allows us to enjoy them without being concerned about a spike in blood glucose. This makes them ideal for diabetics and those who are looking to reduce their sugar intake.
